We partner with 12 farms within 100km of our kitchen. Every morning, produce arrives hours after harvest — still carrying the memory of soil and sunlight.

Imported Exclusives

Select proteins and aged components are sourced directly from producers in Japan, France, and Spain. Relationships built over years. Flavors found nowhere else.

Zero Compromise

If an ingredient does not meet our standard on a given day, the dish is not served. We would rather serve fewer courses with integrity than more without it.
